Mary Jo attended Ellsworth Community College prior to joining the UBTC team. In her spare time she enjoys word puzzle searches, Iowa Hawkeye football and men’s basketball and spending time with her husband and two college age children, Chad and Christy.
Mary Jo joined the UBTC team 33 years ago in 1980. She currently handles the drive-up teller and bookkeeping duties in our Alden office.

|1 - 16oz. bag cut frozen broccoli 1/4 c. spin blend|
|1 can cream of mushroom soup 1/4 c. milk|
|2 oz. cheddar cheese (shredded) 3T margarine|
|1 egg (beaten) 1/4 c. crushed soda crackers|
Cook broccoli according to directions, omitting salt, drain thoroughly. Blend soup, cheese and egg. Add spin blend and milk, stir in cut broccoli. Put in a glass baking dish that has been sprayed with Pam. Melt margarine. Toss it with the crushed cracker crumbs. Put it on top of the broccoli mixture. Bake covered at 375 degrees for 30-35 minutes until mixture is bubbly. Serves 4-6 people.
